Decadent Chocolate Peanut Butter
Ganaché Banana Pudding

You Will Need:

whisk
2 mixing bowls
microwave safe bowl
2 qt. dish
3 qt. saucepan

Ingredients          

          Instructions

Pudding:
3 c. half & half
2/3 c. sugar
1/4 tsp. salt
1/3 c. cornstrch
3 eggs, beaten
2 tsp. vanilla
   extract
1/4 stick butter,
   softened

In a heavy 3 qt. saucepan, heat half & half, sugar, salt, & cornstarch on low heat. Stir constantly with whisk until it begins to thicken. Next, temper beaten eggs in a separate bowl with a little bit of the hot half & half mixture. Whisk constantly. Add tempered egg mixture back into saucepan and continue cooking until thick. Remove from heat. Add vanilla and butter. Cool to at least room temperature.

Whipped Cream:
1 pt. whipping
   cream

Whip heavy cream, adding sugar to taste.

Ganaché:
12oz. Nestlé
   semi-sweet
   chocolate
   morsels
1/2 c. heavy
   whipping
   cream
1/2 c. creamy
   peanut butter
3 tbsp. butter,
   softened
1 tsp. vanilla

In microwave safe bowl, 15 seconds at a time, heat chocolate and whipping cream until melted. Whisk in the peanut butter, butter, and vanilla until smooth.

Assemble:
2 boxes
   Nilla wafers
6 bananas,
   ripe & sliced

In a 2 qt. dish, layer Nilla wafers, banana rounds, pudding and 1/3 of ganaché, repeat for 3 layers. Cover with sweetened whipped cream and decorate with wafers and ganaché.
